One area of my life I’ve really started enjoying the past few years is meal planning and cooking! Sure I lived in an apartment my last two years of college, but I definitely didn’t try cooking much of anything beyond rice, pasta and microwave soup (very healthy). Since I’ve moved into a real apartment and had real cooking gear I have loved finding new recipes, blogs to follow, or cookbooks I want to get! Here are a few of my favorite weeknight dinners —
Chicken Pesto Pasta
If you are a pesto fan you will love this dish – it is so easy! Bake 2 chicken breasts (350 for 30 minutes, more if they are thicker). While the chicken is baking bring a pot of water to boil – add whatever pasta you want. When the pasta is done I mix in 2 big spoonfuls (probably 3 tablespoons?) of pesto. We love pesto so we go pretty heavy on that stuff! If I’m ambitious I make my own pesto (this is an easy recipe), but usually I just buy in bulk from Costco.

Beef Burrito Skillet
This recipe is so perfect for a weeknight because you can make it in one skillet! Most of the ingredients are shelf stable so it’s easy to whip up at anytime. I usually make with beef but I’ve also made it with ground turkey and it’s still delicious. Read the whole recipe here!

Baked Chicken with Mozzarella, Tomato and Pesto
The pesto addiction continues! And if you like caprese salads you will like this dish!
- Preheat oven to 350. Take two chicken breasts – top each chicken breast with a spoonful of pesto, shredded mozzarella, and a slice of tomato. Put into an oven safe dish and bake until the chicken is done and the cheese is melted – usually 30 minutes. I serve this with brown rice and a salad.

Breakfast for Dinner
I think my husband and I could eat breakfast for dinner every night! In fact we’ve had breakfast for dinner 2 nights this week – including this quiche. I love quiches and have made a ton of different recipes, but this is my favorite for weeknights. I always keep pie crusts from Aldi in the freezer, and I’ve got eggs, bacon, and cheese all the time! It’s impossible to mess up and so delicious.
