Happy almost-last-day of February! Time really flies. Tomorrow I’ve got a fun roundup planned to look through the month of February, but today I wanted to discuss another subject – Lent! Lent starts this Wednesday and I have a few thoughts that I wanted to share.

I usually give up something – candy, Facebook, etc – and I will be doing that again this year. My husband and I are both going to give up sweets and coffee (!). He has gone without coffee for the past few Lents and I’ve never thought about it. Well I decided this year would be the year to do it! I’m not working a strict schedule and we have a lot of vacations coming up – so I just bought a massive pack of Lipton tea (his favorite) and English Breakfast tea (my favorite).

Sweets are hard to give up but not really a daily thing – we don’t have a lot of candy or desserts around the apartment so unless we make something (or go out for ice cream), avoiding sweets is a bit easier. The past few years I’ve tried to do something instead of just giving things up – and this year I’m going to try to follow along with She Reads Truth‘s Lent series.

I found this website two years ago and read their devotions on and off. What really drew me in was their great Instagram photos – true story!! I know it sounds shallow but great photography and graphics really can be compelling! So this year I’m really going to try and follow along DAILY. They’re going to be reading Isaiah which is one of my favorite books of the Bible (my love of music might have something to do with it! = Hallelujah Chorus). I also want to find some better vegetarian dishes for Fridays besides pasta or random fish dish. I really think this Salmon foil packet recipe from Delish looks yummy and easy to clean! Since I’m a fan of all things Mexican, these Guacamole Quesadillas from Damn Delicious look amazing, as do the Vegan Enchiladas from Gimme Some Oven (but I’m going to add some cheese and sour cream since we aren’t vegan, let’s be real). Ok maybe one pasta dish – this Penne Alla Vodka looks so good.
