Working in an office again has definitely been an adjustment for my eating and grocery shopping! When I was working from home I could just eat leftovers or a bunch of little snacks – not so much when I’m not at home. My salvation has been weekly meal prep and planning my lunches and snacks! Every Sunday night you’ll find me in the kitchen (with Netflix on my Surface, don’t worry) making my lunches for the week. I’ve tried some recipes and wanted to share my tried and true workweek lunches!
Chicken Burrito Bowls
Always.So.Good. How can you go wrong with basically having chipotle for lunch? Plus making it on your own is healthier and you can include the elements you want! Some weeks I use chicken (just baked and then sliced) and some weeks I use ground turkey – basically whatever I have handy.
Lo Mein
I modify this slightly by adding ground turkey (brown it and add whatever seasoning you want) and more soy sauce. My first time making it I barely tasted the soy sauce concoction when I went to eat it for lunch – but it might work for you! Just taste it and have more soy sauce to add when you reheat. Use whatever vegetables you want – I added more carrots and broccoli because I like them!
Chicken Taco Salad
So I stole this idea from Vinaigrette Salads in Lexington – they make the MOST delicious taco salad and I recreated it! I included:
- Shredded chicken (cooked breasts and shredded)
- Corn & black beans
- Sauteed red, yellow, or green peppers
- Salsa (as dressing)
- Baked tortilla strips
So so good and refreshing! I mean it’s not as good as the $10 salad but it’s waaayyy cheaper, so there’s that 🙂
I always get hungry around 3 so I keep an arsenal of snacks! Here are my favorite snacks that are yummy, keep me full, and are healthy —
- Banana and Almond Butter
- Almonds
- Apples or clementines
