If you’ve followed me for a few months you might remember some other monthly “challenges” I’ve done.
In September I did a social media challenge, and that really opened my eyes to the amount of time I spend on my phone! November was a bit trickier – I tried to fit in reading and that was so much harder than I imagined. Well it’s been a few months since then and I’m starting a new challenge for myself – no eating out during the week!
Why am I doing this? Well a few reasons – one, it’s cheaper! We really don’t eat out a ton so this isn’t the most drastic change, but I usually eat lunch out once a week and then at nights I’ve been home alone. AKA it’s super easy to not go out when it’s just me. But my husband has a way better schedule this month so I won’t be eating dinner alone – yay! Plus it’s WAY healthier. Hard to argue with those 2 reasons!
NOTE: I will not be enforcing this rule when we go to Asheville 🙂 that’s vacation so I’m not going to hold us to challenge!
Plus I’ve seen a lot of recipes I want to try, and I do love cooking. And meal planning and prepping. So maybe this won’t be a hard challenge, but I think it’s a good exercise anyways. Plus I wanted to share this in case anyone else wants to join in! I’m going to be tagging things I cook with the hashtag #marcheatingin if you want to follow along.
Also, to get started on the right foot I’ve been looking for good recipes to try for all your eating in! Here are things I’m going to make this month –
- Crockpot chicken chili from Skinnytaste
- Crockpot chicken pot pie from Pinch of Yum
- Crunchwraps from Pinch of Yum – these look AMAZING. And my husband and I have been loving anything mexican/taco/etc lately.
- One pan steak & veggie skillet from Damn Delicious
Of course I’ll be making beef burrito skillet, some homemade pizza (Trader Joe’s pizza crust is the best!), and probably buffalo chicken salad. And then leftovers to make sure we don’t waste anything! I just HATE throwing things away – so hopefully we can make use of all our leftovers before they go bad.
