So last month I challenged myself to make my own lunches and dinners every weekday. I developed a go-to lunch to make my routine easier, and today I want to share it with you!
Every one of my coworkers now knows what I eat for lunch – a sweet potato bowl! I love it because it’s yummy, easy to make, cheap, and I always have the ingredients.
how to make it
Even if you’re not the best cook, or a bit intimidated by meal prep, you CANNOT beat the ease of this “recipe”. Cube two or three sweet potatoes and drizzle some olive oil, salt, and pepper. Bake at 400 for 30 minutes – or until they’re soft (depends a bit on how small you cube them!) – and that’s it! You’ve got the base of lunches for the week.

I always eat my sweet potatoes with salsa and scrambled eggs. How do I make eggs at work? Enter this find – a microwave omelet maker. I ignore all the directions and crack two eggs, stir, microwave for 1 minute. Done and done!
That’s it most days but if I have it I’ll add avocado or black beans as well. You could also swap out the eggs for ground beef or turkey, and don’t forget Trader Joe’s Everything But The Bagel seasoning!
why I love it
….it’s cheap. Easy. Healthy. Filling. You can add as many toppings as you want, or just stick with the basics! One of my 2018 goals was to eat more veggies, and having sweet potatoes everyday definitely helps with that. I know that I’ll get a good serving or two of veggies at lunch, and I love the fact that this is “real” food and not processed. What more could you want?!
What do you guys think about eating the same thing everyday? I always mocked my husband for eating the same thing for the last 10+ years (I’m not kidding), but having a routine is so easy. I’ve been listening to the podcast Happier and one episode was on creating a “Standardized Vacation”. They talked about how people spend so much time (and energy) even picking a time that works for an extended family – so the vacation never happens. Enter the vacation that happens the same week, in the same spot, every year. It’s an interesting concept – remove the decision stress and just leave the things you like!
I like to think this lunch is the same thing for me. I’ve remove variables, I know what I’m getting, and I don’t even have to think about it anymore. One less thing to wonder about each night! Let me know if you try this sweet potato bowl and if there’s anything else I should add to it – enjoy!
