Life is BUSY lately! I’ll be sharing an update soon but I’ve been depending on some favorite recipes to get us through. So today I wanted to share 5 meals we depend on when we need something delicious and straightforward.
Chicken Burrito Bowls
Sometimes I shred chicken in the crockpot, other times I buy cilantro chicken from Aldi which is AMAZING. But this is an easy meal because we have the basics always! Chicken, rice, black beans, salsa, cheese, and sour cream. We’ll add avocado if we have some too. Plus it’s easy to give elements to baby girl. A hit every time!
Pancakes
Guys we make pancakes for dinner as much as we do for breakfast! Somehow making breakfast for dinner just makes it more fun. THIS is the best pancake recipe and our go-to!
Homemade Red Sauce & Pasta
Grab a pound of ground meat (we do turkey, venison or ground beef), brown it and add some onions and garlic powder. Throw in two cans of diced tomatoes, simmer, and then serve over pasta. It’s SOOOO much healthier than canned pasta sauce and much cheaper too.
Buffalo Chicken Salads
I used to hate everything buffalo seasoned – boy was I missing out. Now I LOVE a good buffalo chicken salad. Take some shredded chicken, toss in buffalo sauce, then serve it over lettuce with whatever additions you want. We love croutons, blue cheese, carrots and tomatoes.
Soup & Grilled Cheese
Another easy favorite over here. We love a good grilled cheese and some tomato soup. Our favorite store brand is Rao’s but we LOVE the Costco tomato soup (it’s only sold in the winter). Dip the sandwich, eat it alone, it’s all good!
