Easter is right around the corner and we are actually going to have some family in town – yay!
I’m excited to decorate and plan a fun menu. We are doing dinner – they actually fly to us on Easter – which is easier for me because I can’t eat eggs….which makes brunch tricky (: Here are some quick notes on what I’m thinking to make it a fun yet straightforward occasion. I do have a 3 year old and almost 1 year old, so I’m not going to be making anything insanely hard or complex! I want yummy and special.
For food, we are going to be eating dinner with family. I’m thinking some combination of the below…
- Salmon – roasted maybe just with garlic and vegan butter? Or maybe crusted with something yummy? I love Salmon and so do my kids! Plus cooking it in the oven is hands-off.
- Smashed Potatoes – potatoes are always a hit as a side for a holiday, and this is a bit of a different way to cook.
- Roasted Asparagus – love love love oven-roasted asparagus! And it’s such a fresh, spring vegetable.
For dessert I am going to make this Vegan carrot cake – I made it a few weeks ago and it was ***delicious***. I don’t know how long this will last after Easter because it’s hard to only have one piece a day. It’s SO GOOD!!!
For decor, I’m going to be using these gingham placemats from Target. I’m going to add some pink florals and maybe some branches in a vase like this (shown below!). I love the natural feeling from branches as well as the height and space they take up. Plus I could leave them up before and after Easter. I’m sure I could find some branches at a local florist or even faux branches like these from Pottery Barn.
